Add a bit of very finely chopped rosemary, salt and some pepper then slowly add a bit of flour as you stir the contents with a whisk. Just a little bit at a time. It will thicken the gravy.

On my week off I decided to tackle Kenji’s Beef Wellington
I’ve made Wellington before and to me it’s a very old-school dish: very heavy, very rich, but bit muddled. Too many things thrown in so that none of the components really shine. It’s not bad, but I wouldn’t say it’s mindblowing. I think the popularity of Wellington is much more about the wow factor of the dish than outstanding flavor.
