Reverse sear Pichana w/Chud Press And Chimichurri Sauce
2004年6月12日 · Well, awhile back, at Costco, I'd seen for sale packages of two "Sirloin Cap" roasts. I'd never seen them before, but thought "hey, sirloin should be good.". With subsequent YouTube videos trying to learn how to cut my own stuff out of more primal cuts...I found out the Pichana steak is from the Sirloin Cap!!
Can't find a damn Tri-Tip. Is a sirloing tip the same???
2008年8月30日 · He said that the sirloin tip roast is located just forward of the tri-tip roast. Both are pretty equal as far as flavor and texture IMO. I also agree with doing the reverse sear once it reaches just shy of 120* taking it ti between 125* and 130*.

2015年7月29日 · I enjoy both a top sirloin and flat iron but I'm more partial to the flat iron. I find that the flat irons are more tender and flavorful than the top sirloins. I do a reverse sear on the flat iron steaks whenever I cook them. They also take well to marinades, and go great in tacos.

2013年8月5日 · Without the very high grill temps, the internal meat temps will get too high, while you are trying to get a good sear. When I do reverse sear steaks, I use minimum of 1½ inch thick steaks, anything thinner does not work well for reverse sear and I just direct grill them. I will cook indirect until the internal temps reach 120°.

2013年1月8日 · If I do reverse sear in my kettle or barrel, I usually target about 275-300 for the "smoke" then sear it when the IT hits about 115 or so. I try to get it to 125-130 IT then rest it. If I do a reverse sear in my pellet cooker, I "smoke" at 180 then sear as stated above.

2014年5月11日 · When they say reverse sear, they are talking about meats that you would cook like a steak - IE internal temp in the 130's (medium rare) not cooked to 200. So you would basically slow smoke the steak to an IT of 100, then fire the grill to high, char the outside, bring the steak to 120-130 and pull it.
