Peppermint is one that to me gets stronger and can be too much. If you do not think it is minty enough you can certainly add a little at a time until it is agreeable to you.

Others ate them- what is it about a group of people at work who will eat anything put before them? The baker said the extract WAS really old and smelled a little funny. It was a disgusting taste.

I would not recommend melting peppermint patties into the ganache, for one thing it would be a waste of money when you can get the same flavor using extract.
