You hit the APP button before you get to the ILS, which will turn your plane onto the ILS.

You can then fly the approach manually, or in NAV mode (a localizer approach) or in APPR mode (a glideslope approach). The AP wont assume what you want to do. In the real G1000 you can turn this feature off in the AUX pages.

I actually don't have a problem landing the plane visually (with all assists off in the sim) so that's not an issue tbh. The A320-flight went perfect, and I was able to land safe and sound at ENGM. When flying the 787-model I did, however, run into a problem on final approach.
