Im making it out of ceder, it will sit on a row or 2 of cinder blocks and have a seperate firebox with smoke/heat piped in. My plan is to have this function as a hot smoker AND a cold smoker when I need it.

2013年6月3日 · The Smoker is Beautiful! My concern is your definition of Cold Smoking...Especially when you are talking some pretty Risky Proteins unless they are Cured. It is a Bad Idea to throw Raw Uncured Turkey Legs and Chicken in a Smoker at any temp between 40 and 140*F for more than 1-2 Hours.

There is a small hole in the floor of the smoker for drippings/grease to flow through into a pan (and to allow air in creating a draft) and a small hole in the top for smoke to vent out. It is really just enough airflow to keep the wood chunks smoldering. Flare-up?

2008年1月9日 · Could a draft have been falling down on my sausage? The thermostat seemed to keep the smoker between 180 and 188 if I can believe my thermometer. I had the thermostat set on 180. The outside temp never got much over 20. The frustrating part was trying to verify what the actual temp inside the smoker was. I think I'll add on a permament thermometer.

2015年11月5日 · The firebox and cook chamber are separated with a piece of 3/16" plate with a 1" gap from the inner wall on each side. This will also be where i place my disposable drip pans. The entire smoker is framed out with 1 1/2" x 1/8" wall tubing, insulated with 1 1/2" Roxul, and skinned with 3/32" plate.
